Eating good food is a pleasure, eating healthily is beneficial to our health, eating responsibly helps to salve our consciences. Eating vegetables in season is an intelligent way of reconciling all of these factors. Vegetables in season are much tastier and richer from a nutritional point of view and if not km O, certainly very close to it.
To learn to have better understanding of the most widely consumed vegetables and to enjoy them when their flavour is at its most intense and their nutritional properties most effective. To really enjoy food in the broadest sense of the term.
Asparagus are usually found on sale at the beginning of spring, first the violet variety originating from the Italian Riviera and then the green and white ones from Bassano del grappa. All asparagus have a delicate flavour and, once the tough woody end part has been removed, are both tender and succulent, especially the larger ones. Asparagus are rich in fiber and also contain vitamins A, B1, B6 and C, folic acid, amminoacids, carotenoids and mineral salts such as calcium, phosphorous and potassium; on account of being a low calorie food they are highly recommended in weight-reducing diets. Asparagus are also famous for their purifying and diuretic properties.
